Fungus Facts

Nobody wants any species of these guys growing near them. But eating them? A whole different story.

I used to think that mushrooms had no nutritional value at all. And to be honest, some varieties offer a lot more benefits. However, in general, all mushrooms are low in saturated Fat,  cholesterol and sodium while being a great source of fiber, vitamin D, vitamin B6, Folate and Selenium. A low cal food with such a nutritionally powerful profile, eat as many as you want. After all, nobody got obese eating too many portabellos.

On the research side, the American Institute for Cancer Research published a study which showed that mushroom extract has the ability to decrease tumor cell growth in mice and in cell cultures. This is likely due to natural compounds in mushrooms which inhibit cancer causing enzymes from reacting in the body. Finally a good reason for mushrooms to multiply.

Fungus just got a facelift.
