Rosemary is my favorite herb. of. all. time. It is so savory, flavorful, and always a perfect addition to chicken or foccacia. Plus it makes a nice name for an old lady.
Herbs really make or break a dish. You can’t make good guacamole with no cilantro. Or curry with no tumeric. Rosemary isn’t really like that, but I like those examples. Rosemary is just good by itself. Which is why I love it. Plus, the health benefits are fantastic. It is super duper high (for similar herbs in its class) in iron, calcium, and vitamin B6. Not to mention that compounds in Rosemary help reduce inflammation and stimulate blood flow to the brain. Hmmm- increased blood flow to the brain? That is a VERY good thing.
This recipe is the next thing I plan to make with rosemary. I can’t wait.
Cynthia wanted suggestions of herbs to plant in her extra pot, and of course I suggested rosemary. I lost, she chose mint. I am happy about that decision. Mojitos. That’s why. I’ll plant my own rosemary.

All good points–except that you can, too, make guacamole without cilantro. Cilantro is an evil, noxious weed and should be avoided at all costs. ;>
